Basil Chicken (Serves 4) up sized

Prep Time: 10 minutes
Total Time: 50 minutes
Cook Time: 40 minutes
Serves : 4

Ingredients
  • 1/3 cup basil, fresh, chopped
  • 2 tablespoons pine nuts
  • 1/4 cup chicken broth, fat-free, low-sodium
  • 2 teaspoons garlic, chopped
  • 1 1/2 tablespoons olive oil, extra virgin
  • 1/4 teaspoon thyme, ground
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 16 ounces chicken breast, boneless/skinless, raw


Preparation
  • Preheat oven to 425°F.
  • Spray a shallow baking dish with non-stick cooking spray.
  • In a food processor or blender, combine the basil leaves, pine nuts, broth, garlic, olive oil, thyme, pepper and salt, and process until pureed.
  • Place the chicken in the baking dish and rub both sides of each chicken breast with the basil mixture; set aside. Bake for 30 to 40 minutes, or until chicken is no longer pink inside.
  • Serve each person one chicken breast.
Three Bean Salad
Prep Time: 10 minutes
Total Time: 10 minutes
Cook Time: 0 minutes

Ingredients
  • 1 cup green beans, cooked
  • 1 cup yellow beans, cooked
  • 1/2 cup kidney beans, canned, reduced sodium
  • 1/4 cup onion, red, chopped
  • 1/4 cup vinegar, cider
  • 1/4 teaspoon black pepper


Preparation
  • Toss beans and onions with vinegar and pepper. Refrigerate until ready to serve.
  • Serve equally divided portions with each person's dinner entree.
Quick & Easy Couscous
Prep Time: 5 minutes or less
Total Time: 10 minutes
Cook Time: 5 minutes or less
Serves : 4

Ingredients
  • 2 2/3 cups couscous, cooked
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons parsley, fresh, chopped


Preparation
  • Prepare couscous per package directions,
  • Drizzle with olive oil and parsley.
  • Divide evenly among 4 plates.
Blueberries
Prep Time: 5 minutes or less
Total Time: 5 minutes or less
Cook Time: 0 minutes
Serves : 4

Ingredients
  • 2 cups blueberries
  • 1/4 cup fat-free whipped topping, frozen


Preparation
  • Top 1/2 cup blueberries with 1 tablespoon of the whipped topping.
  • Serve for each person's dessert.
